Thanks to Ken, we have provided some of his recipes that were discussed during Episode 10 of SCI Life Uncovered.

Mashed Potatoesmashed-potatoes-439976_960_720

INGREDIENTS

  • 12 Yukon Gold potatoes - 3½–4 pounds.
  • Kosher salt
  • 5 large egg yolks
  • 2 garlic cloves, finely chopped
  • 1 1/4 cups heavy cream
  • 3/4 cup sour cream
  • 10 tablespoons butter, melted
  • 1 teaspoon black peppercorns, finely ground

PREPARATION

    Place potatoes in a large pot and pour in water to cover. Season liberally with salt. Bring to a boil over medium-high. Reduce heat and simmer until a knife slides easily through potatoes, 25–35 minutes. Drain and let cool slightly. Preheat oven to 425°F. Whisk egg yolks, garlic, cream, sour cream, butter, and ground pepper in a large bowl; season generously with salt. Mash potatoes thoroughly. Add mashed potatoes into bowl with egg mixture. Fold in gently until just combined, being careful not to over-mix. Transfer to a 3-quart baking dish and decoratively swirl surface. Bake, rotating once, until golden brown and slightly puffed, 30–40 minutes.
Planning Ahead
    Dish can be assembled 1 day ahead. Cover and chill. Increase bake time by 5–10 minutes.

Pumpkin Pie Tip

Take your favorite pumpkin pie recipe, and replace white sugar with brown sugar. Then add zest & juice of one orange. Bake to your recipes directions.

Cranberry Sauce

INGREDIENTS

  • 1-1lb bag fresh/frozen cranberries.
  • 1-Cup white sugar.
  • 1-Cup water.
  • Zest & juice of 1 orange.

PREPARATION

    Combine all ingredients in large pot. Bring to boil over medium - high, stirring Frequently. Reduce heat to a simmer. Let mixture reduce until thickens slightly. About 15 -20 Minutes.

Nancy's Recipe

Apple Crispapple-crisp

INGREDIENTS

  • 4 cups thinly sliced apples
  • 1/4-Cup water
  • 1-Cup packed brown sugar
  • 3/4-Cup flour
  • 1/3-Cup cold butter cubes
  • 1-Tsp Cinnamon

PREPARATION

    Place apples in glass cake pan 13 x 9 set aside. Preheat oven to 350. For the topping, mix together the brown sugar, flour, cold butter cubes, and cinnamon to form a crumble top. Place on top of the apples bake for 40 minutes and enjoy.
